- 1 salted salmon filet
- Coat pan in oil
- Heat oil in pan, med to high heat – wait till pan reach temp and just before oil smokes.
- Place salmon in pan, skin side down. Leave it alone until 2/3 way cooked (approx. 4 min)
- Flip to the other side and leave it alone for another 4 min.
Tip: make diagonal slits on the skin side of salmon to prevent it from curling up.
